Whiskey Balls, Rum Balls, Bourbon Balls, all a family holiday tradition. My husband thinks we're nuts, and he's an imbiber himself, but Mimi's whiskey balls are just the thing to warm a cold soul on a crisp Christmas night.
Whiskey Balls
2 cups vanilla wafers (1 12 oz box)
1 cup chopped pecans
1 cup confectioners sugar
2 tablespoons cocoa
3 tablespoons white Karo syrup
2/3 cup whiskey (I use Irish) or bourbon
First, I double the whole thing, and then don't stick to that 2/3 cup idea. Spill, splash, toss in a bit extra, all the better.
Now, puree the wafers and pecans in the food processor. Add the rest, roll into balls and then roll in granulated sugar (not confectioners, or icing, or powdered sugar). Make them today for Christmas, the longer they sit and ferment the better. I think I'll make some tonight.
